Chicken Brissil gained popularity in Greenville about 1910. Some sources credit the family of the new minister who had arrived in town from California in 1908 with introducing the recipe of chicken basted with a vinegar, butter, lemon and pepper. Originally cooked over a pit of coals, oven-cooked recipes soon followed along with many recipe variations. Many have speculated about the origin of the name. “Brissil” and its variants are an old Scots word indicating food cooked among coals.
